This is just a very basic potato salad recipe that is a perfect companion for Cajun Gumbo! There is nothing like a bite of cold potato salad paired with a bite of hot gumbo!
Ingredients: 2 large baking potatoes; 5 boiled eggs; 3/4 cup mayonnaise; salt; pepper.
First peel potatoes then cut into 1/4-inch cubes.
Boil potatoes in salted water.
Potatoes are done when you can easily pierce with a fork. Pour into colander.
Rinse under cold water to quickly bring down the temperature of the potatoes.
Chop boiled eggs and add to potatoes.
Stir in mayo, salt, and pepper.
Taste and adjust seasonings as needed.
Enjoy with Cajun Gumbo or as a simple side dish!
